This vegetarian mixed grain casserole is a favorite of mine, perfect as a vegetarian main dish or a delicious side dish. This also works well to make ahead of time, to be warmed up and served later.
The recipe includes hearty grains: barley and quinoa with plenty of fiber and protein.
In this version I bought the pre-sliced carrots and canned beans and corn for a super-fast prep time.
In a large casserole dish combine carrots, mushrooms, onions, beans, corn, vegetable broth, green chile, barley, quinoa, and garlic salt.
Bake covered, in a 350 degree oven about 1 hour or until the barley and quinoa are tender. Stir once after 30 minutes. Once out of the oven cover it with shredded cheese and let stand until cheese melts before serving.
